This is my wife’s favorite salad. She makes it any time we have people come over and it is both a huge hit and regularly requested.
DRESSING:
3/4 cups maple syrup
1/2 cup mayonnaise
1/2 cup white whine vinegar
2 tbsp sugar
1 cup vegetable oil
SALAD:
3 granny smith apples, cored, medium diced
1 tsp salt added to a bowl of cool water
mixed baby salad greens
1 cup dried cranberries
1 cup chopped, toasted walnuts
PREPARATION INSTRUCTIONS
DRESSING:
Whisk mayonnaise, maple syrup, vinegar, and sugar in a medium bowl to blend. Gradually whisk in oil until mixture thickens slightly. Season to taste with salt and pepper. Dressing can be made up to three days ahead. Whisk before using.
SALAD:
Soak chopped apples in cool, salty water. Drain well. Refrigerate until needed. Toss greens, apples, cranberries, and 1/2 cup walnuts in large bowl to combine.
Plate salad, add dressing, use remaining walnuts on top.
